Sacher Torte

posted by Vicky <badriya@void.demon.co.uk>

I offered my chocolate cake recipe. It is more or less Sacher Torte as is handed down from my mum who is Vienese.

Jon said there are enough chocolate recipes!

  • 6 oz Butter
  • 6 oz Sugar
  • 6 oz Self-raising flour - sifted
  • 3 eggs
  • 3 tablespoons Cocoa powder
  • Rum - 3 tablespoons
  • Bournville - about 7 oz
  • 3 tablespoons water
  • Apricot Jam
  • Double cream

oh, sorry I am too old to do grams n stuff.

Beat eggs and sugar until it bubbles
Add one egg and some flour to prevent curdling and mix
Repeat with other 2 eggs
Add rest of flour and cocoa and water and mix in well

Prepare a cake tin with removeable bottom - grease and flour it
Put in mixture and bake for about 45 minutes on 180 electric or 375 gas and then put a skewer in to test. If it comes out clean it's done.
Meanwhile lick out bowl.

Cool - remove from tin slice in half and put jam in middle and all over outside. Top and sides.

Melt chocolate and pour over. Cover completely. Lick out saucepan. If you have children they usually appear at the lick stages having been unavailable at the beat the butter and sugar stage.

Whip double cream. Serve not too big slices with lots of cream. It is quite rich.

Oh I sometimes put rum in with the chocolate too.

The cake freezes well. We used it for birthdays as they prefered that to sponge or fruit cakes.
