- 2 tbsps sunflower oil
- 1 onion, finely chopped
- 2 cloves garlic, crushed
- 1/2 tsp chilli powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- 6 tbsps crunchy peanut butter
- 120 ml/4 fl oz water
- 1 tsp soy sauce
- 1 tsp lemon juice
Heat the oil in a pan, add the onion and fry until softened. Add the garlic
and spices, stir and cook for 1 minute. Mix in the peanut butter, then
gradually blend in the water, stirring until thickened. Add the soy sauce
and lemon juice and leave to cool.
