Peanut Dip

  • 2 tbsps sunflower oil
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 1/2 tsp chilli powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 6 tbsps crunchy peanut butter
  • 120 ml/4 fl oz water
  • 1 tsp soy sauce
  • 1 tsp lemon juice

Heat the oil in a pan, add the onion and fry until softened. Add the garlic and spices, stir and cook for 1 minute. Mix in the peanut butter, then gradually blend in the water, stirring until thickened. Add the soy sauce and lemon juice and leave to cool.
