Applesauce Molasses Muffins

Shameless Am. measuring system ahead. If I have any brain power tomorrow, I'll translate them. Otherwise, google is your friend.

  • 1/2 c. butter
  • 1/2 c. sugar
  • 2 eggs
  • 1 c. molasses (Grandma's unsulphered)
  • 1 c. applesauce
  • 2 c. flour (sifted)
  • 1 t. baking powder
  • 1/4 t. baking soda
  • 1 t. cinnamon
  • 1 t. nutmeg

Cream butter & sugar together, add eggs, add molasses & applesauce, add sifted dry ingredients. Do not over-beat.

Bake in a greased 9x13 pan at 350 degrees for 30 min., or in muffin tins (about 2 dozen? I use funny muffin tins, so I just keep going 'til I run out of batter) at 350 for about 20 minutes. (I use a convection oven for my muffins, so I'm not sure how long they should take in a regular oven.)

Lessons learned: if you use a (heart-shaped flutter) cast-iron muffin tin, pre-heat the pan first.
