Lemon Pudding Cake

The following is quoted from Diva on misc.consumers.frugal-living:

  • 1/4 cup sifted flour
  • 1 cup sugar
  • 1/4 tsp. salt
  • 1-1/2 tsp. grated lemon rind
  • 1/4 cup lemon juice
  • 2 egg yolks, well beaten
  • 1 cup milk
  • 2 egg whites, stiffly beaten

Sift together flour, sugar and salt. Stir in lemon rind, juice, egg yolks and milk. Fold in egg whites. Pour into a 1 qt. casserole dish, set dish into another larger dish with an inch of water in it. Bake at 350 degrees for 50 minutes.

As it bakes, a cake will form on top, with lemon pudding on the bottom.

Orange or lime may be substituted, and it says you can serve it hot or cold, but I think it's best cold - a wonderful, refreshing summertime dessert. Enjoy!
