The following is quoted from Diva on misc.consumers.frugal-living:
>Sure! It's from the great old Betty Crocker cookbook, and it's a good
>one! My mom used to make this, and I thought she was a magician : )
- 1/4 cup sifted flour
- 1 cup sugar
- 1/4 tsp. salt
- 1-1/2 tsp. grated lemon rind
- 1/4 cup lemon juice
- 2 egg yolks, well beaten
- 1 cup milk
- 2 egg whites, stiffly beaten
Sift together flour, sugar and salt. Stir in lemon rind, juice, egg
yolks and milk. Fold in egg whites. Pour into a 1 qt. casserole dish,
set dish into another larger dish with an inch of water in it. Bake at
350 degrees for 50 minutes.
As it bakes, a cake will form on top, with lemon pudding on the
bottom.
Orange or lime may be substituted, and it says you can serve it hot or
cold, but I think it's best cold - a wonderful, refreshing summertime
dessert. Enjoy!
